Cajun Cake

This is one of my favorite cakes. The name of it I have is "Top me twice cake" so I gather it has more than one title. Whatever, it is a great cake and like the fact that it does not have a topping made from icing sugar.

This called for way too much butter. I did it twice exactly how it said to do it and each time it separated and was oily on top and then burned it trying to fix it. I tried another recipe with less butter and it was perfect.

Four Egg Yellow Cake

After reading all the reviews I can't understand the negativity and why people had problems. This is an excellent basic cake (definitely better with butter) and requires that the butter be very well creamed with sugar added gradually. Certainly it takes longer than a cake mix but at least it tastes home made. Thanks for a great recipe.
