Creamed Broccoli Soup

This recipe was really good. I liked that it didn't call for cheese, which kept the calorie count down. Instead of butter I used extra virgin olive oil.

Cucumber Soup I

I loved this recipe. It was quick and easy. I used 1/2 cup potato soup instead of farina and pureed the soup for about 2 minutes. The final texture was almost like a broth which made it light and great for a summer dinner.

Strawberry Balsamic Chicken

I halved the marinade, and substituted lain yogurt for half of the yogurt. Also, I added no sugar. In other words, because of what others had commented, and because my husband is not wild about sweet sauce on meat, I made this significantly less sweet. I also cut the pepper in half as I'm not a fan of a lot of pepper. It came out completely delicious. The strawberry flavor goes great with the marinade and the chicken. We enjoyed it with salad, rice, and baklava for dessert.
